TrentoDOC covers white and rose wine undergoing secondary fermentation in the bottle.
TrentoDOC fruit must come from townships within the administrative borders that are suitable for viticulture, the list of towns covers most of the viticultural regions within Trentino.
TrentoDOC vineyard planning, form of trellising, and system of pruning must not transmute the character of the wine derived from each suitable vineyard.
In TrentoDOC no supplement should be used to stimulate the productivity of the vines, with the exception of irrigation in emergencies.
TrentoDOC yields should not exceed 15 metric tons per hecatare, though in certain years this limit may be reduced and in no case should yields exceed the maximum allowed by more than 20%.
TrentoDOC minimum potential alcohol at harvest for grapes destined for TrentoDOC wines shall be 9% ABV while those destined for TrentoDOC Riserva shall be 10% ABV.
TrentoDOC vinification, secondary fermentation and packaging must be performed within the territory of Trentino.
TrentoDOC yield of wine from grapes must not exceed 70%.
If the yield exceeds this limit the first 5% of wine in excess loses the right to the DOC, if the yield exceeds 75% all the production loses the DOC.
TrentoDOC must remain on its lees for a minimum of 15 months from the date of bottling and in any event not before 15 months from the 1st of January following the harvest.
TrentoDOC wines on release must confirm to typical standards, which include a fine and persistent mousse, correct color and minimums of alcohol, acidity, and dry extract as follows, though in most cases producer exceed these minimums.
White wines
Minimum alcoholic content: 11,5% vol.
Minimum total acidity: 5 g/l
Minimum dry extract: 16 g/l
Rosato
Minimum alcoholic content: 11,5% vol.
Minimum total acidity: 5 g/l
Minimum dry extract: 17 g/l
Riserva
Minimum alcoholic content: 12.0% vol.
Minimum total acidity: 5 g/l
Minimum dry extract: 16 g/l
In addition wines shall be categorized by their residual sugar into the following classifications
Less than 3 grams of sugar may be labeled as Brut Nature, Pas Dose, Dosaggio Zero, Brut Zero, Brut Nature
Typically no liqueur d’expedition is used with these wines but the disgorged wine is replaced with the addition of a similar wine
Between 0 and 6 grams of sugar: Extra brut
Less than 12 grams of sugar; Brut
12-17 grams Extra Dry or Extra Brut
17-32 grams Dry, Sec, or Secco,
32-50 grams Demi secco, medium dry or abbocati
Vintage dated TrentoDOC wines must spend at least 24 months on the lees
Both rose and white wines that have spent at least 36 months on the lees can use the denomination Riserva on the label and must be vintage dated.
The back label must include the date of disgorgement and can feature the grape varieties used in the blend, but in a font that cannot exceed 50% of the size used for the denomination TrentoDOC.
In addition, adjectives perceived to be laudatory such as Speciale or Superiore are not allowed while geographical names that refer to the regional origin of the grapes used for production may be used.
TrentoDOC must be packaged in sparkling wine bottles with the classic cork closure.
